Sausage, Egg and Cheese Muffin – Keto Style

Sausage, Egg and Cheese Muffin – Keto Style 1485 1324 Elona Trogub

INGREDIENTS – Makes 12 muffins.
They are great straight from the fridge so don’t hesitate making a batch.

8 eggs
1 tsp baking powder
1 tsp salt 
1/2 c. coconut flour 
1/2 c. butter, melted
1/2 cup pepperjack cheese, shredded
1/2 lb breakfast sausage, fried and crumbled
1/2 onion, chopped and sweated

  1. Pre-heat oven to 350F
  2. Grease a 12-count muffin pan
  3. Mix the coconut flour, baking powder and salt together with the melted butter
  4. Whisk in eggs, two at a time, to the flour/butter mixture until combined, then add 2 more until all 8 eggs are in there
  5. Add the cheese, sausage and onion to the batter
  6. Pour the batter evenly into all the muffin cups all the way to the top of the muffin cup. Don’t worry, they won’t overflow on you.
  7. Bake at 350F for 20-25 minutes or until a toothpick comes out clean. I was worried they’d fall on me if I opened the oven early but they’re pretty hardy little guys.
  8. Cut in half and load with Super Broccoli! Microgreens for a grab-and-go breakfast that keeps you going all day.
