INGREDIENTS – Makes 12 muffins.
They are great straight from the fridge so don’t hesitate making a batch.
8 eggs
1 tsp baking powder
1 tsp salt
1/2 c. coconut flour
1/2 c. butter, melted
1/2 cup pepperjack cheese, shredded
1/2 lb breakfast sausage, fried and crumbled
1/2 onion, chopped and sweated

INSTRUCTIONS
- Pre-heat oven to 350F
- Grease a 12-count muffin pan
- Mix the coconut flour, baking powder and salt together with the melted butter
- Whisk in eggs, two at a time, to the flour/butter mixture until combined, then add 2 more until all 8 eggs are in there
- Add the cheese, sausage and onion to the batter
- Pour the batter evenly into all the muffin cups all the way to the top of the muffin cup. Don’t worry, they won’t overflow on you.
- Bake at 350F for 20-25 minutes or until a toothpick comes out clean. I was worried they’d fall on me if I opened the oven early but they’re pretty hardy little guys.
- Cut in half and load with Super Broccoli! Microgreens for a grab-and-go breakfast that keeps you going all day.
