Smoked Salmon, Avocado & Spice Up Your Life! Microgreens Nori Seaweed Cones

In China, eating fish is considered lucky in the New Year as the word for “fish” sounds like the word for “surplus”. Layering meaning into a meal enriches the eating experience with story and connection. Local ingredients are a direct line to these stories. These smoked salmon wraps are great as a delicious way to ring in the New Year and as a healthy snack choice all year long. And we’ll be here for you, growing microgreens no matter what time of year in our greenhouse in Carson, WA come snow or a whole lotta snow.
Makes 12 cones
Ingredients:
6 Nori Seaweed Sushi Sheets, cut in half
1 piece of Tony’s (or your favorite) Smoked Salmon, skin removed
1 Avocado, ripe
2 oz of Gorge Greens’ Spice Up Your Life! Microgreens
Half, remove pit, then quarter the avocado. Make 1/4″ diagonal slices while still in the skin. Use a large spoon to scoop out the avocado slices.
Slice the salmon across the grain into 1/4″ slices.
Lay down a 3-4 slices of avocado in the center of the nori sheet.
Lay down 1 slice of salmonLay down a small handful of Gorge Greens
Wrap tightly on a diagonal to form an ice cream cone shape.
